WHOLE PEELED CALIFORNIA TOMATOES

We only use single-origin California restaurant-grade 100% whole peeled plum tomatoes - not crushed or pureed, which are canned at peak harvest. The popularity of ‘San Marzano’ and related Italian tomato varieties has resulted in mechanized commercial farming and mislabeling. We hand select our tomatoes so only 1 of every 3 tomatoes from the harvest reach our jar.

SMALL BATCH

We cook in small batches so the sauce in a jar is just like how we have made it in our kitchen for 100+ years, which additionally prevents overcooking. Because the enemy to tomato flavor is heat and time. Most other sauce brands cook in 1-2000 gallon kettles, which overcooks the tomatoes at high temperatures over long periods of time. Creating a significant difference between the first and last jar out of those batches.

Our sauce is blended Smooth to perfectly coat your pasta and allow for versatility in cooking. Make your favorite eggplant or chicken parm, chili, braise meats, or even make a Bloody Mary!

LOW INTERVENTION, REAL INGREDIENTS.

Similar to great wine, we let our ingredients do the talking. Our low-intervention methods never include any Tomato blends, purees, or pastes - tomato paste is tomato waste, a concentrate typically made from the skins, scraps, seeds and even the worms of the harvest. Additionally, we NEVER use preservatives, additives dies, seed oils, added sugars or dehydrated herbs. Just real fresh produce, tomatoes, olive oil and love.
