- Boil a tall pot of water & salt to the salinity of the sea. 
- Add pasta to boiling water, stirring to prevent sticking. 
- In a separate pot or sauce pan, add thinly sliced onions or shallots and butter on low simmer, careful not to burn or brown. Optional: Add Calabrian chili or red pepper if you want to spice it up. 
- Add I jar of Monte's Sauce to the pan with butter and onions and stir. 
- Add 1 cup of heavy cream to sauce and stir. 
- Once pasta is Al Dente, use a spider or slotted spoon to move penne into sauce. 
- Add a half a ladle of pasta water. 
- Toss penne in sauce, continuing to fold in freshly grated parmesan cheese, until the pasta is well coated. 
- Turn off heat and gently keep stirring pasta, allowing a few minutes to cool before plating. 
- Plate & garnish with fresh herbs & freshly grated parmesan.
