Spicy Rigatoni Alla Vodka

This take on rigatoni alla vodka has been most recently been brought to popularity (and your instagram feed) by Carbone. But this recipe is quite simple and timeless, and can be made for about $20 at home.
Ingredients

Monte’s Spicy Sauce
-
Rigatoni Pasta
-
Heavy Cream
-
Butter
-
1 Shallot
-
Salt
-
Fresh Parmesan
-
Calabrian Chili
-
Olive Oil
-
Black Pepper
Directions
Dice shallot
Salt your pasta water to the salinity of the sea
Boil pasta and add pasta
Heat up olive oil in a skillet and add diced shallots
Add a scoop of Calabrian chili to your shallots and fold in a stick of butter
Add Monte’s Spicy Sauce to Calabrian chili and shallot skillet
Boil sauce then take it down to a low simmer
Add a ½ cup of heavy cream
Using a spider spoon transfer your pasta to your sauce skillet
Grate fresh Parmesan directly into sauce sauce and pasta in skillet
Plate and top with as much parm as your heart desires.
